This film offers an opportunity for a glimpse into the history of a dish that is so simple yet made so many different ways. Using information from the 18th and 19th century in Naples, Italy, a small New York City pizzeria and a man who grew up with believing that traditions were a very important part of his life, we'll chronicle the early days of the history of pizza, move to life today in a modern city, spend a day in the life of a pizzaiuolo (trained pizza chef from Naples, Italy) looking to preserve his old world traditions and speculate about an ancient cooking method passed down from generation to generation.
We have access to footage and still photos of Italy and old world pizza making. In addition, we have interviews with local people who have lived through much of the changes in the area and who remember the "old" ways.
Our goal with our film series (Peasant Chef --"Vecchia Camicia Bianca") is to identify and recognize the wonderful, simple peasant dishes that have been served for generations by people from all over the world.
While the focus of the film is on Roberto Caporuscio and how he keeps his old world tradition alive today, we'll round out the piece by looking at what is happening to the pizza industry today. We also want this film to inspire the viewer, to take a step back in time and remember how important it still is to prepare and enjoy a meal with family and friends and to remember "The way we used to eat".
